update default networks list

Would like to let know that https://teztnets.com/ has a couple changes that would be great to update default network list on temple extension

1. mondaynet has rename to weeklynet which was refreshing every monday is now refreshing every wednesday
   the default network name mondaynet can use an update to weeklynet and this week's rpcUrl is https://rpc.weeklynet-2024-05-08.teztnets.com
2. dailynet has retired, can be removed from the default list
